Ingredients
  

  • 1 cup cooked white or brown rice (cooled)
  • ¼ cup cooked turkey, finely chopped
  • 1 large romaine or butter lettuce leaf (washed and dried)
  • 1 tablespoon shredded cheese
  • 1 tablespoon corn kernels (cooked or thawed)
  • 1 teaspoon fresh chives, finely chopped

Equipment

  • Medium mixing bowl
  • Child-sized spoon
  • Measuring spoons
  • Clean cutting board
  • Child-safe knife for chives, with supervision
  • Plate for assembling

Method
 

  1. Prepare the rice mixture. Place the cooked rice in a mixing bowl. Add corn and shredded cheese. Mix gently using circular motions.
  2. Lay the lettuce leaf flat. Place a large lettuce leaf on a plate or cutting board. Smooth it gently with your hands.
  3. Add the filling. Spoon the rice mixture into the center of the lettuce leaf.
  4. Top with turkey. Sprinkle chopped turkey evenly over the rice mixture.
  5. Add chives. Carefully sprinkle chopped chives on top for extra flavor and color.
  6. Roll with care. Fold the sides of the lettuce inward, then roll from the bottom upward, holding gently but firmly.
  7. Serve and enjoy. Slice in half if desired and enjoy the fresh, homemade roll.
