Green Eggs – Spinach Scramble (Montessori-Style)

Ingredients
  

  • 2 eggs
  • ¼ cup pureed spinach (blend until smooth)
  • A pinch of salt
  • A pinch of black pepper
  • 1 teaspoon butter

Method
 

  1. Prepare the spinach puree. Blend fresh spinach with a small amount of water until smooth. Set aside.
  2. Whisk the eggs. Crack the eggs into a bowl. Using a whisk or fork, whisk until the eggs are well combined.
  3. Add the spinach. Pour the spinach puree into the eggs. Add a small pinch of salt and pepper, then mix again.
  4. Heat the pan. With adult supervision, melt butter in a pan over medium heat.
  5. Cook the eggs. Pour the egg mixture into the pan. Let it cook for a few seconds.
  6. Scramble gently. Use a spatula to slowly stir and scramble the eggs until fully cooked and soft.
  7. Serve and enjoy. Transfer to a plate and enjoy the bright green eggs.
